Amur Sturgeon (Acipenser schrenki) caviar name: Osetra

Reaches a body length on average 1 to 1.5 m (maximal 3 m) with a weight reaching 190 kgs. This species comes in two morphs: grey and brown. The rarer brown morph is restricted to the lower and middle reaches of the river while the grey morph is found in the middle, lower, and the estuary of the river (however, not in saltwater).
